Cendré is a soft ripened white mold cheese coated with vegetable ash. This is the cheese that I have dreamed about making for years and I am incredibly proud to have it as our flagship product. It is made from fresh sheep milk and starts out slightly lactic but develops into wonderful creamy paste with sweet notes of cream and a slight hint of mushroom from the rind. It's a subtle flavor, to be sure, so enjoy it with some delicious crusty bread to get the full experience, but also serve with fresh fruit, unsalted nuts, and a glass of Sancerre ….or if you're feeling extravagant, a glass of Champagne!
